Cupcake Adventure #2 - Carrot Cupcake!

Time to get started! Ingredients are out and ready to go!
The ingredients for this cupcake is pretty simple. It did call for golden raisins, but I did not put them in. I don't like raisins and neither do my kiddos.
Don't they look so pretty? Just out of the oven and cooling.

Cream cheese frosting! YUMM!!!! This frosting is right up there with chocolate.
Martha has you add toasted coconut on top. I had one cupcake with coconut and one with out. It does taste better with. I will have to remember that.

Doesn't it look pretty? I will definitely make this one again.

Baby Cakes

I got this for Christmas. I couldn't wait to use it. It makes mini cupcakes in 3-5 minutes. It also can make other things. Can't wait to do those too.
Of course Hope had to help. She's a good licker.

You only put about 2 tablespoons of batter in. I used my medium scoop and it worked great!


I used lines for the first batch. I liked that best. The cupcakes are actually a little larger than when you don't use liners. They are also easier to take out of the pan. The tops do get brown. I don't care for that but that's why there is frosting!


These are with out liners. The girls enjoyed eating these. They didn't have to mess with a liner.
Well, better sign off. Still have to make my other cupcakes.

Cupcake Adventure #1 -- Chocolate Chip Cupcake w/ Chocolate Frosting

Welcome to my Cupcake Adventure. I thought it would be fun to bake my way through Martha Stewart's Cupcake Book. Every Sunday or anyday I can find the time, I will make one recipe out of the book. Yesterday I started with the first recipe, Chocolate Chip Cupcake. Yumm!!


Here is some semi-sweet chocolate that had to be melted and cooled for the frosting. I did this step first so it would have time to cool.


Here are some of the ingredients to get started. Of course you have to have some butter. :)


Here is the batter ready to go into the oven. Using my Pampered Chef large scoop it was just the right size for the cupcakes. One scoop is all you need to fill the liners 3/4 full.


All baked and cooling. Ready for frosting!


Here they are all frosted.






There are 30 cupcakes. Of course I had to sample one. It was good. The cupcake isn't real moist but it isn't dry either. My frosting didn't turn out like I wanted. My chocolate had cooled too much and left little chunks. Still yummy though.

These cupcakes are going to Grandma and Papa's house and my office. Oh, and of course some will stay at home for the girls to eat.

Oh, I almost forgot. I picked up this carrier at Costco. It holds 36 cupcakes! Just what I needed!
